Larb Gai spicy minced chicken salad

Serves 4
Ingredients:
300g chicken breast, minced
4 shallots. Thinly sliced
2 slices of galanga (a type of ginger) finely chopped
3 tablespoons fish sauce
2 tablespoons lime juice
1 tablespoon chilli powder **adjust to taste**
1 tablespoon fresh coriander, finely chopped
1 spring onion, chopped
1 tablespoon fresh mint, chopped
2 tablespoons stick rice, roasted and ground mint leaves for garnish
a selection of fresh vegetables
Method:
1. Put the chicken, shallots, galanga, fish sauce, lime juice and chilli powder into a bowl and mix thoroughly.
2. Heat a wok (or deep frying pan) and on a medium heat cook the chicken mixture for about 5 minutes until the chicken is cooked.
3. Transfer to a bowl and add coriander, spring onion, chopped mint leaves and ground, roasted stick rice and mix well.
4. Serve garnished with mint leaves and a selection of fresh vegetables such as lettuce, spinach, cucumber etc.
