Hot Chocolate Fondants

Ingredients:
200g chocolate
200g icing sugar
200g unsalted butter
55g plain flour
40g cocoa powder
4 whole eggs
4 egg yolks
Method
1. Cream the butter and icing sugar together.
2. Whisk up the eggs and egg yolks and add bit by bit to the mixture.
3. Melt the chocolate and add it to the mixture. (Don’t worry if it looks funny, the flour will bring it back together).
4. Add the flour and cocoa powder and stir until the mixture is smooth.
5. Fill fondant moulds 3/4 full and place in the oven for 10 - 15 minutes (or until firm on top) at 220°C or gas mark 6.
6. Serve with ice cream.
