Chocolate Truffles

Ingredients:
200g Dark Chocolate with a minimum of 70% Cocoa Solids
200ml Double Cream
Method:
1. Add the cream and then the chocolate to a heavy bottom non-stick pan. Cook until chocolate has melted.
2. Whisk by hand over the heat until the mixture is thick and glossy. At this point add any flavouring to your taste to the mixture.
3. Chill overnight in the fridge. Break off and roll the amount of truffle mix required between the palms of your hands until smooth and circular.
4. Coat with whatever you fancy! These truffles will keep up to one week in the fridge.

Coffee
Raisins
Vanilla
Alcohol
Almond Oil
Fruit Flavouring
Peppermint
